Instructions
- In a large pot or deep skillet, heat a tablespoon of oil over medium heat. Add chopped onions, minced garlic, and chopped bell pepper. Sauté until translucent and fragrant.
- Stir in the ground beef or plant-based meat alternative. Cook until browned and cooked through.
- Pour in the diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper. Stir well to blend flavors.
- Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
- In the last 10 minutes, stir in drained black beans and kidney beans. Cook until heated through and flavors meld.
