- 2 lbs beef sirloin, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season beef with salt, pepper, and thyme.
- Heat olive oil in a skillet and sear beef until browned.
- Transfer beef to slow cooker.
- In the same skillet, melt butter, add garlic, and cook until fragrant.
- Pour garlic butter over beef in slow cooker.
- Add potatoes around beef, season, and cover.
- Cook on low for 6-8 hours until beef is tender and potatoes are crispy.
- Garnish with parsley before serving.
