Ingredients

  • 100g confectioner’s sugar
  • 2 large egg whites (aged)
  • 50g granulated sugar
  • Gel food coloring (yellow, blue, and any other fun colors)
  • 120g butter, softened
  • 250g powdered sugar (for filling)
  • 50g cream cheese (for filling)
  • Flavoring (vanilla extract or any other you desire)

Instructions

  1. Sift together the almond flour and confectioner’s sugar in a large bowl.
  2. Whisk the egg whites in another bowl until frothy and gradually add granulated sugar until soft peaks form.
  3. Add gel food coloring to the egg whites and gently fold in.
  4. Fold the dry mixture into the meringue until just combined and pipe onto a baking sheet.
  5. Let the macaron shells rest for about 30 minutes before baking.
  6. Preheat oven to 150°C (300°F) and bake for 15-20 minutes.
  7. Allow shells to cool completely.
  8. Prepare filling by beating butter, powdered sugar, cream cheese, and flavoring until smooth.
  9. Assemble macarons by pairing shells and piping filling between them.
  10. Store in an airtight container in the refrigerator.
