- 2 lbs boneless chicken thighs, cut into chunks
- 1 cup pineapple chunks
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Marinate chicken in soy sauce, honey, lime juice, garlic, paprika, salt, and pepper for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, and vegetables onto skewers alternately.
- Grill skewers for 10-12 minutes, turning occasionally until chicken is cooked and veggies are charred.
- Serve hot with extra lime wedges if desired.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Can substitute shrimp or tofu for chicken.
- Best served with tropical salsa or coconut rice.
