Perfect for quick weeknight meals or entertaining friends, these fajita bowls feature tender grilled chicken, colorful peppers, and fresh toppings for a delightful experience.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 500g boneless, skinless chicken breasts, sliced into strips
  • 3 colorful bell peppers (red, yellow, green), sliced
  • 1 large red onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • Fresh lime and cilantro for garnish
  • Optional toppings: sour cream, shredded cheese, salsa

Instructions

  1. Start by slicing the chicken, peppers, and onion into thin strips. Set aside and prepare the seasonings to give your fajitas authentic flavor.
  2. In a bowl, combine the chicken strips with chili powder, cumin, smoked paprika, salt, pepper, and 1 tablespoon of olive oil. Mix well and let marinate for at least 15 minutes.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and cook the marinated chicken until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, add the sliced peppers and onions. Cook until tender and slightly caramelized, about 5 minutes. Season with a pinch of salt and pepper.
  5. Divide the cooked rice between bowls. Top with the grilled chicken and sautéed vegetables. Finish with a squeeze of lime and chopped cilantro. Add optional toppings like sour cream, shredded cheese, or salsa for extra flavor.

Notes

  • Marinate the chicken for at least 15 minutes for enhanced flavor.
  • Adjust spice levels by adding more chili powder or hot sauce.
  • Use different colored peppers for a more vibrant presentation.
  • Store leftovers in airtight containers in the refrigerator for up to 3 days.
  • Reheat thoroughly before serving.
