Instructions
- In a large mixing bowl, combine the rolled oats, chopped nuts, and chia seeds.
- Add the peanut butter, honey, and vanilla extract to a microwave-safe bowl. Warm for about 20-30 seconds and stir until smooth.
- Pour the wet ingredients into the dry mixture and stir thoroughly until well combined.
- Fold in the chocolate chips or cacao nibs for that extra energy-boosting kick.
- Using a tablespoon or cookie scoop, portion out the mixture and roll into small balls.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
