Instructions

  1. In a medium saucepan, combine water, sugar, salt, and vegetable oil. Bring to a boil over medium heat.
  2. Remove from heat and add the flour all at once, stirring vigorously until dough forms.
  3. Allow to cool slightly, then beat in the egg until smooth and glossy.
  4. Transfer dough to a piping bag fitted with a star-shaped nozzle.
  5. Heat vegetable oil to 375°F (190°C).
  6. Squeeze dough into hot oil, cutting into 4-6 inch pieces. Fry until golden brown, about 2-3 minutes.
  7. Remove with a slotted spoon and drain on paper towels.

Cherry Bomb Topping:

  1. Warm cherry preserves in a small saucepan until runny.
  2. Add red food coloring if desired.
  3. Dip hot churros into cherry preserves or spread on top.
  4. Garnish with fresh cherries or powdered sugar.
