Ingredients

- 2 cups all-purpose flour
- 1 cup boiling water
- 1 bunch scallions (green onions), finely chopped
- 1/2 teaspoon salt
- Vegetable oil for frying
- Dipping sauce (soy sauce, vinegar, optional)
Instructions
- In a large mixing bowl, combine flour and salt. Gradually add boiling water while stirring until dough forms.
- Knead the dough until smooth, cover with a damp cloth, and let it rest for 20 minutes.
- Divide dough into 4 portions, roll out each, sprinkle with scallions, and roll into logs.
- Coil and flatten each log gently, then fry in oil over medium heat until golden brown on both sides.
- Serve hot with dipping sauce of choice and enjoy!
Notes
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Dough can be prepared in advance and refrigerated for up to 24 hours.
- Scallions can be replaced with chives or other herbs if desired.
