Instructions
- Blend soaked chickpeas, garlic, onion, herbs, and spices in a food processor until well combined.
- Add baking soda, pulse briefly, then let mixture rest for 30 minutes.
- Form the mixture into small balls or patties.
- Deep fry or bake falafel until golden and crispy.
- Warm the pita bread and fill with falafel, fresh vegetables, and a drizzle of tahini sauce.
Notes
- You can substitute canned chickpeas for soaked dried ones, but adjust cooking time accordingly.
- For a healthier option, bake the falafel instead of frying.
