Ingredients
Scale
- 1 lb (450g) beef or plant-based protein (for a vegetarian version)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, cubed
- 1 cup canned diced tomatoes
- 1 cup beef or vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional: a pinch of cinnamon for extra sci-fi flavor
Instructions
- Heat the olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the beef or plant-based protein and brown on all sides for about 5 minutes.
- Mix in diced carrots and potatoes, cooking for 3-4 minutes to develop flavors.
- Pour in the canned diced tomatoes and broth. Stir well to combine.
- Season with smoked paprika, cumin, chili powder, salt, and pepper. For a more authentic sci-fi twist, sprinkle a little cinnamon.
- Bring to a boil, then reduce heat to low and cover. Let simmer for 45 minutes until vegetables are tender and flavors meld together.
- Adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.
Notes
- For added flavor, consider simmering the stew with a bay leaf or a dash of hot sauce.
- This stew can be made ahead and tastes even better the next day as flavors meld.
- Use fresh or canned vegetables based on availability; both work well.
