Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix thoroughly.
- Pour wet ingredients into dry, stirring gently until just combined. Do not overmix to keep muffins fluffy.
- Fold in blueberries or chocolate chips if desired.
- Divide batter evenly into muffin cups, filling about 2/3 full.
- Bake for 20-25 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool for 10 minutes before transferring to a wire rack to stay moist and flavorful.
Notes
- For extra moisture, replace part of the milk with Greek yogurt or applesauce.
