- 1 large bag of tortilla chips
- 2 cups of shredded cheddar cheese
- 1 cup of shredded Monterey Jack cheese
- 1 pound of seasoned ground beef or shredded chicken
- 1 can (15 ounces) of black beans, rinsed and drained
- 1 can (15 ounces) of corn, drained
- 1 cup of diced tomatoes
- 1/2 cup of sliced black olives
- 1/4 cup of pickled jalapeños, sliced
- 1/4 cup of chopped red onion
- Sour cream, for serving
- Guacamole, for serving
- Salsa, for serving
Instructions
- In a large skillet, brown the ground beef over medium heat, drain excess grease, and season with taco seasoning or spices.
- Preheat the oven to 350°F (175°C). Spread tortilla chips on a large oven-safe platter and layer with half the cheese, seasoned meat, black beans, corn, tomatoes, olives, onions, jalapeños, and top with the remaining cheese.
- Bake for 10-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven, cool slightly, garnish with sour cream, guacamole, and salsa, then serve immediately.
Notes
- For extra flavor, marinate your meat overnight in taco seasoning.
- Add refried beans to keep the chips from getting soggy.
- Customize toppings to your preference by adding bell peppers or green onions.
- If you lack an oven-safe platter, you can use a large baking sheet with parchment paper.
- For extra spice, use pepper jack cheese or add hot sauce to the meat.
