  • 1 large bag of tortilla chips
  • 2 cups of shredded cheddar cheese
  • 1 cup of shredded Monterey Jack cheese
  • 1 pound of seasoned ground beef or shredded chicken
  • 1 can (15 ounces) of black beans, rinsed and drained
  • 1 can (15 ounces) of corn, drained
  • 1 cup of diced tomatoes
  • 1/2 cup of sliced black olives
  • 1/4 cup of pickled jalapeños, sliced
  • 1/4 cup of chopped red onion
  • Sour cream, for serving
  • Guacamole, for serving
  • Salsa, for serving

Instructions

  1. In a large skillet, brown the ground beef over medium heat, drain excess grease, and season with taco seasoning or spices.
  2. Preheat the oven to 350°F (175°C). Spread tortilla chips on a large oven-safe platter and layer with half the cheese, seasoned meat, black beans, corn, tomatoes, olives, onions, jalapeños, and top with the remaining cheese.
  3. Bake for 10-15 minutes or until the cheese is melted and bubbly.
  4. Remove from the oven, cool slightly, garnish with sour cream, guacamole, and salsa, then serve immediately.
