  • Total Time: 25 minutes

Ingredients

Scale
  • 1 lb (450g) ground beef
  • 1 packet taco seasoning
  • 1 bag (12 oz) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 375°F (190°C). Spread the tortilla chips in a single layer on a large baking sheet or oven-safe platter.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes until the mixture thickens.
  3. Sprinkle half of the shredded cheeses over the tortilla chips, then evenly distribute the seasoned beef. Add the remaining cheese, followed by diced tomatoes, jalapeños, and red onion.
  4. Place the nachos under the broiler for 2-3 minutes until the cheese is bubbly and golden. Remove from the oven and top with fresh cilantro, dollops of sour cream, guacamole, and lime wedges for a zesty finish.

Notes

  • Vegetarian Option: Swap the beef for black beans or seasoned tofu crumbles.
  • Spicy Kick: Add extra jalapeños or a drizzle of hot sauce.
  • Protein Boost: Top with shredded chicken or pulled pork.
  • While nachos are best enjoyed fresh, you can store leftover toppings separately in airtight containers for up to 2 days.
