Ingredients
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 tsp vanilla extract
- Food coloring in vibrant shades (red, yellow, blue, green, purple)
- 1 tbsp baking powder
- ½ tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with colorful cupcake liners.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- In separate bowls, divide the batter equally into five small bowls. Add a few drops of different food coloring to each bowl to create vibrant shades.
- Carefully layer different colored batters into each cupcake liner using a spoon or piping bag, swirling gently to create a psychedelic swirl pattern.
- Bake the cupcakes for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before decorating.
- For decorating, top the cooled cupcakes with white buttercream frosting and colorful sprinkles matching the vibrant palette for a retro look.
Notes
- Store in an airtight container at room temperature for up to 2 days for maximum freshness.
- For longer storage, refrigerate for up to a week. Bring to room temperature before serving.
- Decorate just before serving to keep the colors vibrant and prevent fading.
