  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground beef or turkey, breaking it apart with a spoon, and cook until browned and cooked through.
  5. Drain excess fat if necessary, then stir in the tomato paste, chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook for 2 minutes to toast the spices.
  6. Add diced tomatoes, kidney beans, and black beans. Stir well to combine.
  7. Bring the mixture to a boil, then reduce heat and simmer uncovered for 30 minutes to meld flavors.
  8. Adjust seasoning as needed and serve hot, garnished with your favorite toppings.
