- 2 lbs fresh mussels, cleaned and debearded
- 1 bottle of pale beer (12 oz)
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
- Pour in the beer and bring to a simmer.
- Add the mussels, cover, and steam until shells open, about 5-7 minutes.
- Discard any mussels that do not open. Season with salt and pepper.
- Serve hot, garnished with parsley and lemon wedges alongside crusty bread.
