- 200g graham cracker crumbs
- 100g unsalted butter, melted
- 600g cream cheese
- 150g granulated sugar
- 3 large eggs
- 120ml sour cream
- 2 tsp vanilla extract
- 1/2 cup butterscotch syrup
- Blue velvet frosting (prepared separately)
Instructions
- Combine graham cracker crumbs and melted butter, press into the base of a springform pan, bake at 170°C for 10 minutes.
- Cream together cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, and butterscotch syrup.
- Pour filling over crust, bake at 160°C for 50-60 minutes until set. Cool completely.
- Spread blue velvet frosting on top, decorate with edible stars, and refrigerate for at least 4 hours before serving.
Notes
- Ensure cheesecake is fully cooled before frosting.
- For best color, use a high-quality blue velvet frosting.
