- 2 cups all-purpose flour

- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk (dairy or plant-based)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- Optional: blue food coloring for a Mr. Meeseeks effect
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well.
- Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
- Gently fold in the blueberries, reserving some for topping if desired. Add a few drops of blue food coloring to achieve the Mr. Meeseeks blue hue.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Top with remaining blueberries and sprinkle with sugar for a crunchy finish.
- Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
- Allow muffins to cool for a few minutes before transferring to a wire rack.
Notes
- Use frozen blueberries without thawing to prevent bleeding of color.
- For healthier options, substitute whole wheat flour or add flaxseed.
- Do not overmix the batter to keep muffins light and fluffy.
