  • Total Time: 30-35 minutes
  • Yield: 12 muffins

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • Optional: blue food coloring for a Mr. Meeseeks effect

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well.
  4. Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until just combined.
  5. Gently fold in the blueberries, reserving some for topping if desired. Add a few drops of blue food coloring to achieve the Mr. Meeseeks blue hue.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Top with remaining blueberries and sprinkle with sugar for a crunchy finish.
  8. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
  9. Allow muffins to cool for a few minutes before transferring to a wire rack.

Notes

  • Use frozen blueberries without thawing to prevent bleeding of color.
  • For healthier options, substitute whole wheat flour or add flaxseed.
  • Do not overmix the batter to keep muffins light and fluffy.
