Instructions
- Finely chop or pulse the Sweetwater River salmon in a food processor until lightly minced, avoiding over-processing.
- In a large mixing bowl, combine the minced salmon with breadcrumbs, chopped herbs, garlic, shallot, egg, lemon juice, salt, and pepper. Mix thoroughly until well incorporated.
- Shape the mixture into about 1/4 to 1/3 cup patties, ensuring even shape for uniform cooking.
- Heat oil in a skillet over medium heat. Carefully place patties into the hot oil and cook for 3-4 minutes on each side until golden brown and cooked through.

- Use fresh salmon for the best flavor and texture.
- Do not overmix the ingredients to keep the patties tender.
- Adjust herbs to taste or add a pinch of cayenne for a spicy kick.
- For a healthier version, bake at 375°F (190°C) for 15-20 minutes instead of frying.
