- 3 carrots, sliced
- 2 parsnips, sliced
- 2 beets, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- Fresh thyme and rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss carrots, parsnips, and beets with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until caramelized.
- In a large pot, heat remaining olive oil and sauté onion and garlic until fragrant.
- Add roasted vegetables to the pot along with vegetable broth and herbs. Simmer for 15 minutes.
- Season to taste and serve hot with fresh herbs on top.

- Can be served with crusty bread for a complete meal.
