  • 1 large egg
  • ¼ cup blackstrap molasses
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • ¼ cup candied orange peel, finely chopped
  • 2 tbsp crystallized ginger, finely chopped
  • 1 tbsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
  3. In another bowl, beat butter and brown sugar until light and fluffy. Add egg and molasses; mix well.
  4. Stir in vanilla, milk, orange peel, ginger, and lemon zest.
  5. Gradually fold in dry ingredients until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake 55–65 minutes, or until a toothpick comes out clean.
  8. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

  • For extra moisture, wrap cooled loaf in plastic wrap and let rest overnight before slicing.
  • Substitute molasses with treacle or dark corn syrup if unavailable.
