- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ½ cup unsalted butter, softened
- ¾ cup packed dark brown sugar
- 1 large egg
- ¼ cup blackstrap molasses
- ½ cup whole milk
- 1 tsp vanilla extract
- ¼ cup candied orange peel, finely chopped
- 2 tbsp crystallized ginger, finely chopped
- 1 tbsp lemon zest
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
- In another bowl, beat butter and brown sugar until light and fluffy. Add egg and molasses; mix well.
- Stir in vanilla, milk, orange peel, ginger, and lemon zest.
- Gradually fold in dry ingredients until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra moisture, wrap cooled loaf in plastic wrap and let rest overnight before slicing.
- Substitute molasses with treacle or dark corn syrup if unavailable.
- Slice thinly—these are dense and intensely flavorful.
