Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup unsalted butter (cold and cubed)
- 1 large egg
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Whisk together flour, sugar, salt, and baking powder in a large bowl
- Cut in cold butter until mixture resembles coarse crumbs
- In separate bowl, whisk egg, milk and vanilla, then gradually add to dry ingredients
- Turn dough onto floured surface and knead gently 4-5 times
- Roll out to 1/2-inch thickness and cut with 2-inch round cutter
- Place on parchment-lined baking sheet and bake at 400°F for 12-15 minutes
- Cool completely before dusting with powdered sugar
Notes
- For best results, use cold butter straight from refrigerator
- Don’t overwork the dough to maintain tender texture
- Dust with powdered sugar just before serving for the ‘London fog’ effect
- Pairs perfectly with Earl Grey tea
