Instructions
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add the egg, molasses, and vanilla extract; mix well. Gradually incorporate the dry ingredients until a sticky dough forms.
- Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour to chill.
- Preheat oven to 350°F (175°C). On a lightly floured surface, roll out the dough to ¼ inch thickness. Use cookie cutters to shape the cookies in Gingy or fairy-tale characters’ shapes.
- Place the cut-out cookies on a baking sheet lined with parchment paper. Bake for 8–10 minutes until edges are golden. Cool completely on wire racks.
- Decorate with royal icing or decorating gels to bring Gingy to life with eyes, smile, and details. Let the decorations set before serving.
