Instructions

  1. Combine flour, sugar, and a pinch of salt in a food processor or mixing bowl.
  2. Add cold, cubed butter and pulse until mixture resembles coarse crumbs.
  3. Mix egg yolk with 2 tablespoons of ice water and add to dough; mix until just combined. Form into a disc, wrap, and refrigerate for 30 minutes.
  4. Preheat oven to 375°F (190°C). Roll out dough and fit into tart pan. Prick with a fork, cover with parchment and pie weights. Bake for 15 minutes, remove weights, bake another 10 minutes until golden.
  5. Whisk together sugar, eggs, lemon juice, and zest in a saucepan. Cook over medium heat, stirring until thickened (~5-7 minutes). Stir in heavy cream.
  6. Pour lemon filling into baked crust. Bake at 350°F (175°C) for 15 minutes. Cool completely and garnish with powdered sugar or lemon zest.
