- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 large egg yolk
- 2-3 tablespoons ice-cold water
- 1 cup granulated sugar

Instructions
- Combine flour, sugar, and a pinch of salt in a food processor or mixing bowl.
- Add cold, cubed butter and pulse until mixture resembles coarse crumbs.
- Mix egg yolk with 2 tablespoons of ice water and add to dough; mix until just combined. Form into a disc, wrap, and refrigerate for 30 minutes.
- Preheat oven to 375°F (190°C). Roll out dough and fit into tart pan. Prick with a fork, cover with parchment and pie weights. Bake for 15 minutes, remove weights, bake another 10 minutes until golden.
- Whisk together sugar, eggs, lemon juice, and zest in a saucepan. Cook over medium heat, stirring until thickened (~5-7 minutes). Stir in heavy cream.
- Pour lemon filling into baked crust. Bake at 350°F (175°C) for 15 minutes. Cool completely and garnish with powdered sugar or lemon zest.

- Ensure the butter is cold to achieve a flaky crust.
- Can be prepared a day ahead; refrigerate the assembled tart before serving.
- For a dairy-free version, substitute with coconut cream and vegan butter.
