Instructions
- Heat olive oil in a skillet and brown the chicken thighs on all sides. Transfer to slow cooker.
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- Pour in chicken broth and season with thyme, salt, and pepper.
- Cook on low for 6-8 hours until chicken and vegetables are tender.
- Shred the chicken slightly and stir before serving.
Notes
For extra flavor, add a bay leaf during cooking. Garnish with fresh parsley before serving. Suitable for gluten-free diets.
