Instructions
- Mix crushed graham crackers with melted butter and press into a springform pan to form the crust. Chill for 30 minutes.
- Preheat oven to 160°C (320°F). Beat cream cheese and sugar until smooth.
- Add sour cream, peppermint extract, and food coloring; mix well.
- Incorporate eggs one at a time, then stir in melted white chocolate.
- Pour filling over crust and bake for 50-60 minutes until set.
- Cool completely, then pour the green jelly glaze on top, smoothing out evenly. Refrigerate for at least 4 hours before serving.
