- 200g dark chocolate, chopped
- 500g cream cheese, softened
- 200g granulated sugar
- 3 large eggs
- 150ml sour cream
- 150g digestive biscuits, crushed
- 100g unsalted butter, melted
- 100ml fresh mint syrup
Instructions
- Combine crushed digestive biscuits with melted butter and press into the bottom of a springform pan. Chill for 30 minutes.
- Melt dark chocolate and let cool slightly.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in melted chocolate and sour cream.
- Pour filling over crust and bake at 160°C (320°F) for 50 minutes. Cool completely.
- Mix mint syrup with a little water and pour over the cooled cheesecake to create the glaze. Chill for at least 4 hours before serving.
Notes
- Ensure cream cheese is softened to prevent lumps.
- Chill the cheesecake well for clean slicing.
- Use fresh mint syrup for best flavor.
