Ingredients

  • 200g dark chocolate, chopped
  • 500g cream cheese, softened
  • 200g granulated sugar
  • 3 large eggs
  • 150ml sour cream
  • 150g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 100ml fresh mint syrup

Instructions

  1. Combine crushed digestive biscuits with melted butter and press into the bottom of a springform pan. Chill for 30 minutes.
  2. Melt dark chocolate and let cool slightly.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in melted chocolate and sour cream.
  4. Pour filling over crust and bake at 160°C (320°F) for 50 minutes. Cool completely.
  5. Mix mint syrup with a little water and pour over the cooled cheesecake to create the glaze. Chill for at least 4 hours before serving.
