- 1 ½ cups all-purpose flour
- 1 cup caster sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup butterscotch chips
- ½ cup sour cream
- 1 tsp vanilla extract
- ½ cup butterscotch syrup
- Green food coloring
Instructions
- Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners.
- Mix flour and baking powder in a bowl.
- Cream butter and sugar until fluffy. Add eggs one at a time, beating well.
- Alternate adding flour mixture and sour cream, beginning and ending with flour. Mix in vanilla.
- Stir in butterscotch chips and a few drops of green food coloring until evenly combined.
- Divide batter among cupcake liners and bake for 18-20 minutes. Cool completely.
- Prepare green butterbeer frosting. Pipe onto cooled cupcakes and decorate as desired.
Notes
- For extra flavor, add a splash of caramel sauce to the frosting.
- Use a star tip for decorative frosting patterns.
