Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

- In a large mixing bowl, beat together the sugar, vegetable oil, eggs, and vanilla until smooth.

- Gradually add the dry ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Stir in the white vinegar to activate the leavening.
- Divide the batter evenly into the cupcake liners, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool completely before frosting.
