- 1 lb (450g) ground beef or plant-based burger patty
- 4 spicy burger buns or brioche buns
- 1 spicy chipotle mayonnaise (see guardian-approved spicy mayo)
- 4 slices pepper jack cheese
- 1 red onion, sliced thin
- Fresh jalapeño slices for extra heat
- Fresh lettuce leaves
- Tomato slices
- Olive oil for grilling
- Salt and Pepper to taste
Instructions
- Preheat your grill or skillet over medium-high heat. Brush with olive oil.
- Form the ground beef (or plant-based alternative) into four equal-sized patties. Season with salt and pepper.
- Cook the patties for about 4-5 minutes per side or until desired doneness. During the last minute, place a slice of pepper jack cheese on top to melt.
- While burgers are cooking, prepare the spicy chipotle mayonnaise by mixing mayonnaise with a teaspoon of chipotle chili powder or finely chopped chipotle peppers.
- Toast the burger buns lightly on the grill for extra flavor and texture.
- Spread the spicy chipotle mayonnaise generously on both buns.
- Place a leafy lettuce leaf on the bottom bun, followed by the cooked burger patty with melted cheese.
- Add slices of red onion, jalapeños, and tomato to add layers of heat and freshness.
- Top with pickled peppers or avocado slices if desired, then cover with the top bun.
Notes
- For a milder flavor, reduce the amount of jalapeños and chipotle mayo.
- Use vegan cheese or plant-based patties to make the burgers vegetarian or vegan.
- Preparing ingredients in advance makes assembly faster and easier.
