Ingredients
Scale
- 1 cup dried yellow split peas
- 4 cups vegetable broth
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil or Vulcan-approved alternative
- Fresh herbs like parsley or cilantro for garnish
Instructions
- Rinse the dried yellow split peas thoroughly until the water runs clear.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until fragrant and the vegetables are tender, approximately 5-7 minutes.
- Add the rinsed split peas, cumin, and turmeric. Stir well to coat the vegetables and peas with the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for about 45 minutes, stirring occasionally, until the split peas are soft and the soup has thickened.
- Use an immersion blender or transfer the soup to a blender to purée until smooth, resembling the calm and clear logic of Spock.
- Season with salt and pepper to taste. Garnish with fresh herbs like parsley or cilantro for added flavor and color.
Notes
- For a creamier texture, blend the soup until completely smooth.
- You can add a splash of lemon juice for extra brightness.
- Use organic ingredients for the most authentic and healthy flavor.
- Leftovers can be stored in airtight containers in the refrigerator for up to 3 days or frozen for up to 3 months.
- Reheat gently on the stove or microwave to preserve flavors.
