- 1 cup of yellow cornmeal
- 1 cup of all-purpose flour
- 1/4 cup of granulated sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1 cup of milk (dairy or plant-based)
- 2 large eggs
- 1/4 cup of melted unsalted butter or oil
- Optional: Food coloring (golden yellow or metallic) for that authentic C-3PO look
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9-inch square baking pan or cast-iron skillet.
- In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, combine milk, eggs, and melted butter. Whisk until fully blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- If desired, add a few drops of gold food coloring or edible gold dust to achieve a metallic or golden finish. Mix well.
- Pour the batter into your prepared baking dish. Smooth the surface with a spatula.
- Bake for approximately 20-25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from oven and let cool slightly before slicing. For a more authentic look, decorate with edible metallic spray or gold icing to resemble C-3PO’s exterior.
Notes
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerated for up to a week. Reheat in the microwave or oven before serving.
- For longer storage, freeze slices individually for up to 3 months.
- Add shredded cheese or chopped herbs for extra flavor.
