  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • For Salted Caramel Layer:
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream, warmed
  • 4 tbsp unsalted butter
  • 1 tsp flaky sea salt
  • For Topping:
  • 1/2 cup crushed pretzels
  • 1/4 cup cocoa powder, for dusting
  • Extra flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
  2. Beat butter and sugars until light and fluffy. Add eggs and vanilla; mix well.
  3. In a separate bowl, whisk flour, baking soda, and salt. Gradually blend into butter mixture. Stir in oats and chocolate chips.
  4. Press 2/3 of dough into prepared pan; bake for 12 minutes. Cool slightly.
  5. Meanwhile, make caramel: Heat sugar and water in a saucepan over medium heat until sugar dissolves and turns amber ( stirring only briefly). Remove from heat. Carefully whisk in warm cream and butter. Stir in sea salt.
  6. Pour caramel over baked crust, spreading evenly. Crumble remaining dough over caramel in a random, “Wookiee-texture” pattern.
  7. Bake 18–22 minutes until golden. Cool completely.
  8. Dust with cocoa powder, sprinkle pretzels and extra sea salt. Slice into bars.
