Instructions
- Wash and chop all vegetables using the Fullstar Ultimate Veggie Prep Master for efficiency.
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent, about 5 minutes.
- Add diced carrots, celery, potatoes, and parsnips; cook for another 10 minutes, stirring occasionally.
- Pour in the vegetable broth and add dried thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer uncovered for approximately 30 minutes until vegetables are tender.
- Stir in chopped rootleaf greens or spinach, cook for 5 more minutes until wilted. For a creamier texture, add a splash of coconut milk and stir well.
