- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 tbsp red food coloring
- 1/2 cup sour cream
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for cheesecake)
- 1 large egg (for cheesecake)
- 1 tsp vanilla extract (for cheesecake)
- 1/2 cup crushed chocolate grahams or chocolate cookie crumbs
- 2 tbsp melted butter (for topping)
- 1 tbsp lemon juice (for glaze)
- 2 tbsp powdered sugar (for glaze)
- Red food coloring for drizzle
Instructions
- Preheat oven to 350°F (175°C). Line 9×9-inch baking pan with parchment paper and lightly grease.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix oil, sugar, eggs, vanilla, buttermilk, food coloring, and sour cream until smooth. Gradually fold in dry ingredients.
- Pour half the red velvet batter into the pan.
- Beat cream cheese, sugar, egg, and vanilla until smooth. Spoon dollops over batter and swirl with a knife.
- Pour remaining red velvet batter on top, then swirl again gently.
- Mix crushed chocolate graham crumbs with melted butter. Sprinkle over batter and press lightly.
- Bake for 30–35 minutes, until set. Cool completely, then chill for 2+ hours before slicing.
- Mix lemon juice and powdered sugar for glaze; add red food coloring. Drizzle over cooled bars.
Notes
- For a vegan version, use flax eggs, dairy-free cream cheese, and plant-based butter.
- For an authentic Hawkins Lab vibe, add a pinch of activated charcoal to the top crumbs for extra ‘experiment gone wrong’ darkness.
- Store covered in refrigerator for up to 5 days.
