- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Royal icing in various colors
- Assorted edible glitter and sprinkles (for decoration)
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy using a KitchenAid stand mixer.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients until the dough forms a cohesive ball. Chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
- Use cookie cutters in various sizes and shapes to resemble Christmas lights or shape them freely.
- Arrange cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until edges are just golden brown. Let cool completely before decorating.
- Prepare royal icing in vibrant colors such as red, yellow, blue, green, and purple. Use piping bags or squeeze bottles to create colorful lights on each cookie, mimicking Joyce’s iconic lights. Add edible glitter and sprinkles for extra sparkle.

- Decorate with royal icing and sprinkles for a festive look.
- You can prepare and decorate these cookies 1-2 days in advance; store in an airtight container.
