Ingredients

  • 1 lb (450g) ground beef (80% lean)
  • 3 brioche slider buns, split
  • 3 oz (85g) Gruyère cheese, thinly sliced
  • 2 tbsp olive oil
  • 1 small yellow onion, thinly sliced
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1 garlic clove, minced
  • 1 oz edible gold leaf (loose, flaked or sheets)
  • 2 tbsp truffle aioli
  • 3–4 fresh arugula leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a bowl, combine ground beef, Worcestershire, garlic, smoked paprika, salt, and pepper. Form into 3 equal patties (about the size of the buns).
  2. In a skillet over medium heat, warm olive oil. Sauté onions with a pinch of salt. Cover and cook 10–12 minutes until golden. Add honey, cook 2 minutes more. Set aside.
  3. Grill or pan-sear patties 3–4 minutes per side for medium, or to desired doneness. Top each with Gruyère during last minute to melt.
  4. Lightly toast bun halves in the same skillet.
  5. Spread truffle aioli on both bun halves. Layer bottom buns with arugula, then a patty, then onions. Top with gold leaf flakes (press gently).
  6. Carefully cap with top buns and serve immediately.

Notes

  • For best results, press gold leaf gently with a soft brush or tweezers to avoid over-application.
  • Gold leaf is safe to eat and adds luxury—but use food-grade only.
  • Substitute bun toasts: brioche, potato, or pretzel for fun texture contrast.
