- 1 lb (450g) ground beef (80% lean)
- 3 brioche slider buns, split
- 3 oz (85g) Gruyère cheese, thinly sliced
- 2 tbsp olive oil
- 1 small yellow onion, thinly sliced
- 1 tbsp honey
- 1 tsp smoked paprika
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- 1 oz edible gold leaf (loose, flaked or sheets)
- 2 tbsp truffle aioli
- 3–4 fresh arugula leaves
- Salt and freshly ground black pepper, to taste
Instructions
- In a bowl, combine ground beef, Worcestershire, garlic, smoked paprika, salt, and pepper. Form into 3 equal patties (about the size of the buns).
- In a skillet over medium heat, warm olive oil. Sauté onions with a pinch of salt. Cover and cook 10–12 minutes until golden. Add honey, cook 2 minutes more. Set aside.
- Grill or pan-sear patties 3–4 minutes per side for medium, or to desired doneness. Top each with Gruyère during last minute to melt.
- Lightly toast bun halves in the same skillet.
- Spread truffle aioli on both bun halves. Layer bottom buns with arugula, then a patty, then onions. Top with gold leaf flakes (press gently).
- Carefully cap with top buns and serve immediately.
Notes
- For best results, press gold leaf gently with a soft brush or tweezers to avoid over-application.
- Gold leaf is safe to eat and adds luxury—but use food-grade only.
- Substitute bun toasts: brioche, potato, or pretzel for fun texture contrast.
