Instructions
- Combine the sugar, water, and cream of tartar in a medium saucepan. Heat over medium-high heat, stirring constantly until the sugar dissolves completely.
- Bring the mixture to a boil without stirring. Use a candy thermometer to monitor the temperature; heat until it reaches 300°F (hard crack stage).
- Remove the syrup from heat and carefully add the green food coloring and your preferred flavor extract, stirring gently to incorporate.
- Pour the hot syrup into a heat-safe container or silicone molds for shaping.
- Allow the syrup to cool slightly before placing a clean stick or string into the mixture to serve as a “seed” for crystal growth.
- Let the candy sit undisturbed at room temperature for 4-7 days to develop beautiful, crystal-like structures.
