- 1 cup heavy cream
- 2 tablespoons instant coffee granules
- 4 oz semi-sweet chocolate, chopped
- 3 large eggs, separated
- 1/4 cup granulated sugar

Instructions
- In a heatproof bowl, melt chopped chocolate over simmering water or in the microwave, then set aside to cool slightly.
- In a small saucepan, heat 1/4 cup of heavy cream with coffee granules until dissolved, then let cool.
- In a mixing bowl, whisk egg yolks with sugar until thick and pale, then slowly incorporate the coffee mixture and melted chocolate.
- In a separate bowl, beat remaining heavy cream until soft peaks form.
- Gently fold whipped cream into the chocolate mixture until well combined.
- In another bowl, whisk egg whites until stiff peaks form, then fold into the mousse mixture carefully.
- Spoon into serving glasses, chill for at least 2 hours, then top with whipped cream and chocolate shavings before serving.
