Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and sugar using a KitchenAid Classic Iconic Stand Mixer or hand mixer until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Sift together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture into the wet ingredients, stirring until combined.
- Fold in the dark chocolate chips or chopped dark chocolate with a spatula.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
