Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar using a KitchenAid Classic Iconic Stand Mixer or hand mixer until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Sift together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture into the wet ingredients, stirring until combined.
  5. Fold in the dark chocolate chips or chopped dark chocolate with a spatula.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
