- 1/3 cup shredded cheddar cheese
- 2 tbsp chopped green onions
- 1 tbsp butter

Instructions
- Crush potato chips into small bits — not too fine, some texture remains.
- In a bowl, whisk eggs with milk, salt, and pepper. Fold in crushed chips, cheese, and green onions.
- Melt butter in a nonstick skillet over medium heat.
- Pour in egg mixture, gently stirring until mostly set (about 2–3 minutes).
- Let set slightly, then fold omelette in half. Cook 1 more minute until golden and edges are crisp.
- Serve immediately on a wooden board with ketchup on the side.
