- 1/2 cup soy sauce
- 1/2 cup apple cider vinegar or cane vinegar
- 1 cup chicken broth
- 6 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 1 large onion, sliced
- 1 tablespoon cooking oil
- Optional: 1 tablespoon sugar or honey
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a large bowl, combine soy sauce, vinegar, minced garlic, bay leaves, and peppercorns. Add chicken pieces and marinate for at least 30 minutes or overnight.
- Sear the Chicken: Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and brown on all sides for 5-7 minutes.
- Simmer the Adobo: Transfer chicken to a slow cooker or large pot. Add reserved marinade, chicken broth, and sliced onions. Bring to a boil, then simmer for 40-45 minutes until tender.
- Finish the Dish: Adjust seasoning with salt, pepper, or sugar. Thicken the sauce if desired by simmering until slightly reduced.
- Serve Hot: Serve over steamed white rice with optional garnishes like chopped scallions or cilantro.
