Instructions
- Preheat your oven to 375°F (190°C). Finely chop the onion and garlic.
- In a large bowl, mix cooked lentils, chopped onion and garlic, mixed nuts, bread crumbs, tomato paste, soy sauce, thyme, rosemary, black pepper, and salt until well combined.
- Beat the eggs or flaxseed mixture and fold into the nut mixture to bind everything together.
- Shape the mixture into a loaf in a greased loaf pan or form into a rustic shape on a baking sheet.
- Bake for 45-50 minutes until golden brown and firm to the touch.
