Ingredients

- 2 cups granulated sugar
- 1/2 cup cornstarch
- 1/2 teaspoon cream of tartar
- 1 1/2 cups water
- 1 teaspoon rosewater
- Blue food coloring
- Powdered sugar for dusting
Instructions
- Combine water and sugar in a saucepan, heating over medium heat until sugar dissolves.
- Add cream of tartar and bring to a simmer.
- In a separate bowl, mix cornstarch with a little cold water to make a slurry.
- Gradually add the slurry into the simmering sugar mixture, stirring constantly until thickened.
- Add rosewater and blue food coloring, stirring well.
- Pour the mixture into a greased square pan and let it set at room temperature for 4 hours or overnight.
- Cut into cubes and dust with powdered sugar before serving.
Notes
- Stir continuously to avoid lumps.
- Use a silicone mold for even shapes.
- Can be stored in an airtight container for up to a week.
