- 2 cups granulated sugar
- 1 cup water
- 1 tbsp lemon juice
- 1 tsp cream of tartar
- 1 tbsp rose water (or other floral water like orange blossom)
- 1 tsp pistachio extract (optional, for nutty tone)
- 1/2 cup powdered sugar (for dusting)
- 1 tbsp cornstarch ( zusätzlich for dusting)
- Edible gold dust (optional)
- Dried rose petals or pink sugar crystals for garnish (optional)
Instructions
- Line a 9×9-inch pan with parchment, lightly oil it.
- In a saucepan, combine sugar, water, lemon juice, and cream of tartar. Bring to a boil over medium heat, stirring until sugar dissolves.
- Attach a candy thermometer. Bring mixture to 240°F (soft-ball stage), about 10–12 minutes. Do not stir once boiling.
- Remove from heat. Stir in rose water and pistachio extract.
- Pour into prepared pan. Cool 2 hours until set.
- Sift powdered sugar and cornstarch together. Turn out gel and cut into 1-inch squares.
- Toss squares in the powder mixture until fully coated. Dust with edible gold for a frosty finish. Garnish with rose petals if desired.
- Store in an airtight container between parchment paper.
Notes
- For stronger floral notes, increase rose water to 1½ tbsp—but be careful, it’s potent!
- For a smoother texture, strain the syrup before adding flavorings.
- To avoid stickiness, ensure completely cooled before cutting and dusting.
- Optional: Add a few drops of red food coloring for the iconic “icy crimson” aesthetic from the film.
