- 200g all-purpose flour
- 100g unsalted butter, chilled and cubed
- 50g powdered sugar
- 1 large egg yolk
- 2–3 tablespoons cold water
- Salt to taste
- For the filling:
- 250g golden syrup
- 150ml fresh lemon juice
- 2 large eggs
- 1 tablespoon lemon zest
- 1/2 teaspoon ground ginger
- Powdered sugar, for serving
Instructions
- Gather all ingredients needed for making the tart.
- In a mixing bowl, combine flour, chilled butter, and powdered sugar to create a breadcrumb-like texture.
- Add the egg yolk and cold water to form a dough, wrap, and chill for 30 minutes.
- In a saucepan, mix golden syrup, lemon juice, eggs, lemon zest, and ginger over low heat until slightly thickened.
- Roll out the chilled pastry, line a tart pan, trim edges, and blind bake for 15 minutes at 180°C.
- Remove weights, pour in the filling, and bake for another 20 minutes until golden brown.
- Let it cool before serving.
Notes
- Store the tart in an airtight container for up to 3-4 days.
- Serve it cold or gently reheat in the oven.
- Dust with powdered sugar and serve with whipped cream or ice cream.
