- 1 package (approximately 14 oz) of frozen chopped spinach, thawed and drained
- 1 cup ricotta cheese or cream cheese
- 1 cup shredded mozzarella or feta cheese
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 sheet puff pastry (thawed if frozen)
- Salt and freshly ground black pepper to taste
- Optional: nutmeg or chili flakes for extra flavor
Instructions
- In a mixing bowl, combine drained spinach, ricotta cheese, shredded cheese, eggs, chopped onion, and minced garlic. Season with salt, pepper, and optional spices. Mix until well blended.
- Roll out the puff pastry on a lightly floured surface. Cut into squares approximately 3×3 inches.
- Place a spoonful of the spinach mixture into each pastry square. Fold the corners to form pouches or into triangles, pinching the edges to seal.
- Arrange the filled pastries on a baking sheet lined with parchment paper. Bake at 375°F (190°C) for 20-25 minutes or until golden brown.
Notes
- Ensure the spinach is well drained to prevent soggy puffs.
- For crispier puffs, brush the tops with an egg wash before baking.
- Make ahead: assemble and refrigerate the puffs before baking. Reheat in an oven to maintain crispiness.
