Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup brewed strong coffee, cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Crumb topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup cold unsalted butter, cubed
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or a square baking dish, and set aside.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, beat the softened butter and sugar until creamy. Add eggs one at a time, then stir in vanilla and brewed coffee.
  4. Gradually add dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
  5. Mix flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter until coarse crumbs form.
  6. Pour batter into the prepared pan. Sprinkle crumb topping evenly over the batter.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
