Instructions
- Preheat your oven to 375°F (190°C). Roll out the puff pastry on a lightly floured surface to smooth out creases.

- Place on a baking sheet lined with parchment paper, brush with egg wash, and bake for 15-20 minutes until golden and crispy. Set aside to cool.
- Combine the heavy cream, butter, sugar, vanilla, and a pinch of salt in a saucepan. Warm over medium heat, stirring occasionally.
- Once the mixture begins to simmer, remove from heat and add the chopped dark chocolate. Let sit for 2 minutes, then stir until smooth and glossy.
- Allow the ganache to cool slightly before proceeding.
- Spread a layer of chocolate ganache on the baked puff pastry base.
- Top with a second pastry layer or spoon more ganache, and repeat for a layered effect.
- Finish with a glossy chocolate top, and garnish with edible gold leaf or chocolate shavings for an elegant finish.
