- 2 cups oat flour (or ground rolled oats)
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup honey (plus 2 tbsp for glaze)
- 1/4 cup melted butter or coconut oil
- 1 large egg
- 1/4 cup milk (dairy or plant-based)
- 1/2 cup chopped walnuts (optional)
- 1/4 cup raisins or chopped dried apricots (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- In a bowl, whisk oat flour, all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk honey, melted butter, egg, and milk until smooth.
- Fold wet ingredients into dry until just combined. Stir in nuts and dried fruit if using.
- Pour batter into prepared pan. Smooth top.
- Bake 45–50 minutes, or until a toothpick comes out clean.
- Remove from oven. While still warm, poke holes in top and brush with 2 tbsp honey.
- Cool in pan 10 minutes, then transfer to wire rack.
Notes
- For extra richness, add 1/4 cup chopped crystallized ginger.
- Store in an airtight container for up to 4 days — they stay moist thanks to the honey.
- To serve: slice thick and warm in a toaster or pan with butter. Pair with clotted cream or goat cheese for a Savory-Honeysweet twist.
