Ingredients

  • 2 cups oat flour (or ground rolled oats)
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup honey (plus 2 tbsp for glaze)
  • 1/4 cup melted butter or coconut oil
  • 1 large egg
  • 1/4 cup milk (dairy or plant-based)
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup raisins or chopped dried apricots (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
  2. In a bowl, whisk oat flour, all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk honey, melted butter, egg, and milk until smooth.
  4. Fold wet ingredients into dry until just combined. Stir in nuts and dried fruit if using.
  5. Pour batter into prepared pan. Smooth top.
  6. Bake 45–50 minutes, or until a toothpick comes out clean.
  7. Remove from oven. While still warm, poke holes in top and brush with 2 tbsp honey.
  8. Cool in pan 10 minutes, then transfer to wire rack.

Notes

  • For extra richness, add 1/4 cup chopped crystallized ginger.
  • Store in an airtight container for up to 4 days — they stay moist thanks to the honey.
  • To serve: slice thick and warm in a toaster or pan with butter. Pair with clotted cream or goat cheese for a Savory-Honeysweet twist.
